STIR-FRY

Are you in a hurry or not in the mood to cook a big meal ? I got the solution for you (Haha this really seems like what salesman in a commercial would say). Take out all your veggies from your fridge, cut them up and make a succulent stir-fry ! It takes no time to prepare and only a couple minutes to cook. Before you know it, you’ll be serving yourself seconds ;)

Ps – Don’t forget to use olive oil spray to prevent the ingredients form sticking to the pan ! Bon appetite :)

Serves 4

2 ½ cups of brown rice

1 medium Broccoli head

1/2 white Onion, chopped

1 Green Bell Pepper, cut lengthwise

1 pound Steak, trimmed and thinly sliced

1 garlic cloves

Salt and Pepper

Basil

(I even added some feta cheese at the end, just to experiment. It was so tasty ! It added texture to the meal.)

Preparation

Bring 5 cups of water to boil & cook the rice until it absorbs most of the water.

Steam broccoli until al-dente

Meanwhile, heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray, and add onion and bell pepper to pan. Cook 3 minutes or until crisp-tender; transfer to a large bowl.

Add strips of steak to pan; sauté 2 minutes or until slightly wilted; add the ingredients in the bowl to frying pan. Stir often until meat is completely cooked. Add dried garlic, pepper and salt to taste.

Serve on cooked rice and top with flakes of dried basil (or parsley) to taste.
